Sitka: Hands-on Venison Butchery, Processing and Cooking

Learn how to transform a hindquarter from a local Sitka blacktail deer into individual steaks and roasts, prepare these cuts for freezing, and make several tasty meals using this meat. Participants will gain hands-on experience with butchery and cooking and take home several pieces of venison.

The workshop will be led by Ian Derauf, who has been hunting and cooking wild game since he was a teenager. Being involved with his food from field to plate is what first got him excited about cooking, and making meals from what he harvests continues to be a major passion of his.


Participants in this workshop series will meet 6-8 p.m. Tuesday, Jan. 21 and Wednesday, Jan. 22, 2025, at Sitka Lutheran Church kitchen (224 Lincoln St.). Please use the back entrance to the church located on Harbor Drive, as the front door will be locked. The entrance is located down a one-way alley, and there is limited parking available. The cost for the workshop series is $50 and includes all materials. Must be 14 years old or older. Registration deadline is Jan. 18.
